Shams means “sun” in Arabic. Legend has it that the Persian god Mithra would at dawn climb aboard his gold-studded chariot and whip his horses to draw the sun until dusk. In the evening he was swallowed by a man, only to come back to life at dawn... The heat expands our hearts, in a peppery, ginger, saffron embrace.
